3 tbsp butter
4 tbsp brown sugar or whatever you have
2/3 small eating apples (good way to use up ones that are going a bit soft)
½ tsp ground cloves
1 tsp ground cinnamon
75g blueberries or strawberries or sultanas or cranberries or sour cherries
75g sliced almonds or walnut pieces or any nut you like
4 tbsp semolina (but if you haven’t got any, they are fine without )
500g pack puff pastry, I always so for ready rolled because I’m lazy
little plain flour for rolling
1 egg beaten.
First make the filling; melt the butter & 3 tbsp of the sugar in a saucepan. Put in the apples & stir cook for around 5 mins, until the fruit is softened but not cooked. Remove from the heat & add whatever other fruit ingredient you fancy.
Roll out the pastry on a lightly floured surface to around £1 thickness. Cut out 8 even squares. Prick the squares all over with a fork & transfer to lined baking tray, sprinkle the middle with ½ tsp semolina each.
Divide the filling between the pastry squares, spooning into the centre of each square. Brush the edges with egg & pinch together. Brush all over the puffs with the rest of the egg. They can be covered & chilled for a few hours till you want to cook & eat them
Heat the oven 200’C fan /Gas 7. Dust with the remaining sugar & cook for 20 minutes until the pastry is golden. They may pop open, but that just makes look more rustic.
Eat hot served with custard & ice-cream or cold with a cup of tea.
